This is a live sourdough starter, not a powder. Born in Australia in 2017 and maintained with organic unbleached wheat (baker’s) flour from Wholegrain Milling, it has a creamy, custard-like texture, a light cream colour, and a distinctive wheat starter aroma with natural tangy, vinegar-like notes. Active and ready to feed, it gives faster, more reliable fermentation than dried starters.
Each batch ferments for 24 to 48 hours until fully ripe, then is packed fresh with all air pressed out. The naturally low pH from lactic acid bacteria helps preserve the culture during shipping and keeps it stable on arrival.
After feeding, the starter often doubles or triples in volume within hours and is ready to bake with in 24 to 48 hours. It works best in lighter-style sourdoughs, pizza, focaccia, and soft pastry doughs such as cinnamon rolls or croissants. Use 15 to 20 percent directly in your dough, or build a leaven for extra strength.
