This is a genuine live sourdough starter, not a powder. It originates from Poland and has been carefully maintained in Australia since 2014 using organic whole rye flour from Wholegrain Milling. The starter has a smooth, paste-like texture, a light brown colour, and a clean, fruity aroma. Active and ready to feed, it gives faster, more reliable fermentation than dried starters.
Each batch ferments for 24 to 48 hours until fully ripe, then is packed fresh with all air pressed out. The naturally low pH from lactic acid bacteria helps preserve the culture during shipping and keeps it stable on arrival.
After feeding, the starter commonly doubles or triples within hours and is ready to bake with in 24 to 48 hours. It performs reliably in classic sourdough formulas and responds well whether used directly in dough or built into a leaven for extra strength. Use 15 to 20 percent directly in your dough, or build a leaven for extra strength.
